I first made marmalade for our guests for breakfast a year ago using a friend’s recipe for Three Fruit Marmalade and I give full credit to Karen for the recipe itself. Even though I also offer a good quality branded product to guests, I’ve only bought one jar this year!
Ingredients:
- 1 red grapefruit
- 1 large lemon
- 1 large orange
- 1 kg sugar
- 1.5 litres of water
Equipment:
Glass jars with screw top lids, vegetable peeler, sharp knife, juicer, large/jam pan, muslin bag, wooden spoon, two plates, oven cloth, ladle & funnel
Preparation:
- Thoroughly wash fruit to remove waxy residue which is added to fruit to extend its shelf life
- Sterilise jars then place jars and lids into the oven at 120C to keep warm until bottling
- Put a plate or two into the freezer for testing the setting point
Method:
- Use a vegetable peeler or knife to remove rind from all three fruit
- Use a sharp knife to shred the rind as course or finely as desired (use a food processor to shred them if prefered)
- Juice all three fruit and put the juice into a large pan
- Place the pith, pips and remaining peel into a muslin bag then put into pan
- Add water to the pan, bring to the boil then simmer for two hours
- Carefully remove the muslin bag and discard
- Add the sugar to the pan and stir until dissolved
- Bring to a rolling boil and boil for 15 mins
- Test for setting: put a small amount of liquid onto a cold plate, allow to cool then push the liquid with your finger. If it does NOT wrinkle then boil for a further 10 mins and repeat the test. If it wrinkles, it’s ready to bottle
- Remove hot jars and lids from oven using a clean oven cloth avoiding putting fingers into the jars which may allow bacteria to grow after bottling
- Using sterilised ladle and funnel, fill the jars leaving a small air gap at the top and screw lids on immediately
- Smile when you hear the plop as the jars seal themselves as they cool and label when cold
Heath advice:
- The liquid reaches temperatures that will cause severe burns if spilt onto the skin
- Grapefruit cannot be given to some people taking certain drugs.
I must confess that I also like a branded lemon & lime marmalade so I’m looking for a recipe for that now!!
