I made some cupcakes at Easter for the guests when they arrived and posted a picture of them onto facebook and got some wonderful comments … but I have to say they’re so easy to make.
I have a friend who keeps free range, organic hens and ducks which lay the most delicious eggs with huge yolks which I normally use for this recipe.
Cordelia’s tried and tested all-in-one cupcake recipe (makes 6 cupcakes):
50g caster sugar
50g self-raising flour
Collect all four ingredients together into a large bowl and whisk with an electric mixer – you could beat with a wooden spoon if you prefer.
Divide the mixture into paper cases and place into baking tins (patty tins) and bake in the oven at 180C or gas mark 4 for 12-15 minutes.
The frosting …
100g icing sugar
Whisked until light and fluffy and piped over the top.
Our guests enjoy them on arrival … there’s rarely any leftovers!
